Kubu is the signature bamboo restaurant of Mandapa, a Ritz-Carlton Reserve, on Jalan Kedewatan in Ubud, set beside the Ayung River. Its multi-course tasting menus are grounded in local Indonesian ingredients, sourced from communities and foraged within 100 kilometres under a zero-waste, root-to-leaf approach led by executive sous chef Wayan Eka Sunarya. Alongside the Kubu fine-dining menu there is a vegetarian Root to Leaf menu. The restaurant seats 52, including nine private cocoons, and serves dinner daily from 17:30 to 23:00.
