Ambar — "sky" in Sanskrit — is the cocktail bar at Mandapa, a Ritz-Carlton Reserve, set adjacent to Mandapa's Wantilan lobby with an outdoor wooden deck over the forest and room for up to 60 guests. Its signature cocktails are built on local herbs, roots, barks and botanicals drawn from Taru Pramana, the Balinese manuscript of plant medicine, and include coconut-aged cocktails served tableside and a house-made vermouth; the food is Japanese-inspired gastronomy. Live jazz plays daily from 6:30 PM to 9:20 PM, with a different line-up each night of the week.
