Baiyun, written Bai Yun by the resort, is a Cantonese dim sum and hot pot restaurant at The Apurva Kempinski Bali in Sawangan, Nusa Dua. Its name means 'white cloud' in Mandarin, after the steam that rises from the hot pots. The chefs have created signature soup bases including Chicken Herbal, Pork Ribs and Vegetarian, served with fresh meats and locally grown organic vegetables, and its dim sum is steamed fresh daily. It serves lunch from 12:00 to 16:00 and dinner from 16:00 to 22:30 daily, with an unlimited-to-order dim sum brunch at weekends.
