Pasar. Kitchen & bar. is a Peruvian restaurant and bar on Jl. Pungutan in Sanur, open Wednesday to Sunday for dinner. Its own site describes “a neighbourhood restaurant built around fire, fresh ingredients, and the vibrant flavours of Peru”, and says the kitchen is built around one piece of equipment, a wood-fed open grill: “The flavours are Peruvian, the produce is Balinese, and the fire is the bridge between them.” Chef Jorge Valderrama grew up between Chile and Peru and cooked in Lima, Santiago, Sydney, New Zealand and Singapore. The room is small, with warm light and an open kitchen.
